This is a Filipino Traddional Cococnut Pudding, Made with sweetened condensed milk,evaporated milk,corn kernels with a sprinkling of toasted coconut.

Maja blanca Recipe
  • ½ cup water
  • ½ cup cornstarch
  • 1 cup coconut milk
  • ¾ cup water
  • ½ cup white sugar
  • ¼ cup fresh sweet corn kernels
  • ¼ cup sweetened flaked coconut
  1. Grease a 20cm (base size) square cake pan and line the base and sides with baking paper.
  2. Place the 105g (3/4 cup) cornflour in a large saucepan. Gradually stir in the 375ml (1 1/2 cups) evaporated milk until well combined.
  3. Add the 400ml can coconut milk and 250ml (1 cup) sweetened condensed milk to the pan. Use a balloon whisk to whisk continuously over medium heat until the mixture comes to the boil and thickens. Add the 55g (1/2 cup) drained canned corn kernels and cook, stirring, until it thickens and forms a paste-like consistency. Immediately remove from heat and pour into prepared pan. Tap lightly on the bench to remove any air bubbles. Set aside to cool completely. Place in the fridge for 4 hours to set.
  4. Cut into squares and sprinkle with Toasted shredded coconut, to sprinkle to serve.
