Description
Another favorite Filipino dish is the Caldereta. It is a hearty meat dish using chevon (goat meat), beef, or pork combined with potatoes, carrots, tomato sauce, and liver spread or liver paste. This is a popular dish served during special occasions and a regular in every Filipino cookbook.

In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, stirring occasionally, until lightly browned on all sides.

Remove the beef from the pot and set aside. Add the garlic and onion to the pot and sauté until softened.

Return the beef to the pot and add the tomato sauce, beef broth, bay leaves, and crushed peppercorns. Bring to a boil, then reduce heat and simmer for 60-90 minutes, or until the beef is tender.

Once the beef is tender, stir in the liver spread. Add the potatoes, carrots, bell peppers, and green olives. Cook for another 10-15 minutes until the vegetables are tender.

Season with salt and pepper to taste. Serve the beef kaldereta hot, over steamed white rice.
